Shrimp, Cucumber & Feta Orzo Salad

zesty and refreshing- perfect for warm days

Hello friends! A good friend of mine brought this over to our home a few weeks ago, and it was so delicious. I had to recreate it and found a different recipe tweaked it and added tomatoes and shrimp- if I do say so myself I was spot ON. SO GOOD.

Ingredients:

2.5 cups of orzo

1/2 cup lemon juice

1/2 cup olive oil

1 cucumber, chopped

2 cups of shrimp, peel and take the tail off

1 cup chopped parsley

2 cups crumbled feta cheese

tsp. salt

1 tsp. pepper

Directions:

1) Bring water to a boil then cook orzo for 7-10 mins. Drain and set aside.

2) Cook shrimp buy boiling it for 2 minutes and remove when it turns orange. Splash it with some oil, salt and pepper to taste.  Set it aside also.

3)  Get a large mixing bowl. Add the drained orzo and add mix together lemon, olive oil, salt, and pepper. Add the cucumber, feta, shrimp, sprinkle with the parsley and taste. Add more salt or pepper if necessary.

 

How easy peasy is that for a light and breezy meal?!
